Crispy Lemon Thyme Breadcrumbs

1 standard baguette (about 10-12 inches)

ΒΌ stick butter, melted

zest from 1 lemon

salt, pinch

4 thyme sprigs, leaves stripped

1. Prepare the crispy lemon thyme breadcrumbs by pulsing the baguette in a food processor until you have very coarse crumbs.

2. Add melted butter, lemon zest, a pinch of salt, and thyme and mix just to combine, ending up with crumbs that resemble panko in size.

3. Toast on sheet pan at 325 degrees until golden and fragrant, about 15 minutes. Alternatively, tossing panko crumbs with the butter, lemon zest, and thyme and toasting works well. (Bread crumbs freeze really well, too.)
